Dr. Lusting has brought attention to what can be seen as one of the most important health issues of our time, the American tendency towards over-consumption of sugar. In this interview, as well as his video "Sugar: The Bitter Truth", he raises many good points as to why the increased consumption of sugars, and more directly, high fructose corn syrup, has led to an overall decrease in the health of Americans. The question now, once we have identified what can be seen as a contributing factor to rising obesity levels, is how to fix it? Is there a way to influence American food policy to reduce the presence of high fructose corn syrup in our diet? Ultimately, when it comes down to it, I feel that the American tendency to protect freedom of choice and speech, coupled with the massive presence and enmeshment of big-business interests with American politics, will make it hard to counteract the interests of large corporations in keeping the food supply inundated with corn and high-fructose corn syrup. I feel, then, that the direction public policy should take is one that emphasizes educating the public and making them aware. No one can tell the public what they can and cannot eat, no one can even truly know what they should eat, as the human diet is so highly specific to each person's needs, yet we should all be aware of what we are eating, and more importantly, who is benefiting from what we are eating. If we are not benefitting nutritionally, and big corporations are benefitting financially, something is wrong with the food system of today.
